There was one that waved an E-11 in the air, but didn't show him shooting it.
And that one Ewok knew how to start a speeder bike, so presumably they can watch the stormtroopers to see what they do to make the E-11 shoot, and then do the same.

Actually I'm reading Zahn's Choices of One right now. It seems like Thrawn himself had planned the Death Star II's defensive setup, and the Emperor had followed Thrawn's advice to the letter except where the Ewoks were concerned. Thrawn warned the Emperor, "don't dismiss too quickly those natives you mentioned. Even primitives can sometimes be used to deadly effect." Palpatine dismissed them anyway, and look what happened.
Thrawn ftw, Palpy ftl, and Ewoks a bland so-so in the middle, imho.
